The southwest has been unbelievably good to me and for this reason, I feel it’s important to give back. I’m passionate about inspiring the next generation of award-winning chefs and, by partnering with the academy, I hope to be part of this driving force. From a young age food has been my passion and to this day, there’s nothing more exciting than developing unique dishes and flavours with the local produce.

From my own career I know how valuable learning from experience and work shadowing is. In creating this programme, I’ve made sure that each apprentice will get the chance to work with myself, our top chefs and this outstanding local college to help develop their skills in the best environment.

My aim is to inspire as many people as possible to join this fantastic industry and to feel the same passion I did, when I first walked into a busy kitchen. The excellent teams I’ve been part of, and the great service we were able to achieve, is one of the reasons I’ve continued my journey in hospitality and I hope this could be the motivation for some of you too?
