Mahé Cookery School and Chef’s Table

Adjoining Paul Ainsworth at No.6, Mahé is an exciting addition to Padstow’s vibrant gastronomic community. The interiors – featuring one-of-a-kind antiques and bespoke furnishings carefully selected by Emma Ainsworth and designer Eve Cullen-Cornes – provide an elegant, intimate space in which guests can discover how to create stunning dishes, or enjoy a personal and unique experience at our chef’s table.

Beginnings

Named after the Seychelles island where Paul’s parents met, Mahé is built on an ethos of ‘beginnings’ through its family ties to the island, as well the fundamentals of cookery, all whilst showcasing the very best of Cornish produce.

“It has been John, Emma and my dream to open our own cookery school for some time now, and we are incredibly proud to finally be launching Mahé.

“We thought long and hard about a name that would suit its origins. Quite rightly, Emma said it should resonate with beginnings, and my parents meeting on an island in the Indian Ocean was the very start of their journey. Our guests at Mahé will witness the creation of dishes from the very start to finish by long-time colleague and friend, John Walton. The three of us are so excited to welcome our first students.”

Beginnings

John Walton – Chef Patron, Mahé

Paul has known John for over 15 years, since they first met working together under Marcus Wareing at Pétrus in 2003. Born and raised in Padstow, John began his career working for Rick Stein at The Seafood Restaurant, returning to his hometown to join Paul at No. 6 in 2006. In over a decade as Paul’s right-hand man, John has become a leader and mentor to the whole Ainsworth family, and his incredible talent and craftsmanship have been instrumental in gaining and maintaining No. 6’s Michelin star.

During the day Mahé operates as a cookery school and every cookery class begins with a light breakfast in Paul Ainsworth at No. 6, where you and your fellow students will meet over fresh coffee and locally sourced treats.

Once you’re fuelled up for the morning ahead, you’ll get the chance to meet No. 6’s Head Chef, Chris McClurg and the team who are the life and soul of our Michelin star restaurant.

Then you’ll head up to Mahé and don your chef’s whites. With a maximum of five students in each class, you’ll receive hands-on tuition from John, learning how to create your own dishes to take home.

After a morning under John’s expert instruction, you’ll break for lunch, which will be served to you at our gorgeous chef’s table or out on Mahé’s private terrace with glass of champagne to celebrate the morning’s success!

The afternoon will see you honing your cooking skills – learning the tips and tricks to take your dishes to the next level. You’ll finish the day with a beautiful bag filled with the fruits of your labours, all packaged up for you to enjoy at home.

Cookery Courses

Our courses are intimate, practical, accessible and fun, and cost from £195.

John will teach you about every aspect of the cooking process, from the basics of chopping an onion to the intricacies of patisserie – no question is too simple or too complicated!

Our classes use the freshest local, seasonal produce to create easy-to-follow recipes, which are suitable for all levels of experience – whether you are a kitchen novice or a food fanatic, we have a course to inspire you.

We accommodate all dietary requirements, so if you have any requests or restrictions, just let us know when booking and we’ll make sure that your course is tailored to your needs.

In the evening, John and his team create and serve bespoke menus of world-class gastronomy for up to 10 diners, whilst offering creative insight and a detailed understanding of the dishes throughout the night.
