Paul has known John for over 15 years, since they first met working together under Marcus Wareing at Pétrus in 2003. Born and raised in Padstow, John began his career working for Rick Stein at The Seafood Restaurant, returning to his hometown to join Paul at No. 6 in 2006. In over a decade as Paul’s right-hand man, John has become a mentor to the Ainsworth family, and has been instrumental in gaining and maintaining No. 6’s Michelin star.

Now Chef Patron of Mahé, John’s dishes celebrate Cornish ingredients and flavours, and bear the hallmarks of his years working side by side with Paul in the No. 6 kitchen. Mahé offers guests the opportunity to see John’s craftsmanship and phenomenal flair for contemporary cookery in action, and gain a deeper understanding of the culinary journey behind every dish.

Our Chef's Table

Sitting just centimetres away from the kitchen, guests can watch John and his team prepare and serve a seven-course menu of modern British gastronomy, crafted from meticulously sourced Cornish produce.

Our chef’s table is a unique and completely personal experience – you can choose to interact with John through every step of the cooking process, or slip out onto our private terrace with a cocktail between courses.

John’s bespoke tasting menu costs from £125 per person, and changes with the seasons to celebrate the stunning produce grown, made, caught and farmed just miles from Mahé’s door.

Elly Owen, our sommelier at Paul Ainsworth at No. 6, personally selects the wines in our Padstow cellar, and has created an exclusive wine flight to enhance John’s dishes. A celebratory glass of champagne is included with your tasting menu, to help you start your evening in style, and Elly is on hand to guide you through our wine list and help you choose something special to take your evening with us to the next level.
