We’re passionate about game! We get an incredible sense of satisfaction from sourcing and cooking seasonal game ingredients and firmly believe that it doesn’t need to be scary. In honour of Great British Game Week, we’re here to teach you the skills and techniques that will take you all the way from field to fork, and help you to make the most of the wild meat right on your doorstep.
These lean, nutritious meats are ideal for anyone looking for a healthier alternative to beef and lamb, and are a fantastic way to switch up your standard Sunday roast. Our one-day game cookery course is perfect for people who love the distinctive flavours of these wild meats, but are unsure how to cook with them. John will teach you how to pluck, draw and joint a variety of game birds, as well as butcher a whole saddle of venison, before turning them into tasty, crowd-pleasing dishes.
Our courses are practical and hands-on, with a maximum of five students per class, so you’ll have the chance to pick John’s brains about every step of the cooking process, and will leave us with the confidence to source and cook the very best seasonal game.
