Liam Evans
Head Sommelier and Beverage Director

Liam’s passion for drinks became apparent during his formative years within hospitality “down under”. Drawing on his experiences in some of New Zealand’s top wineries, micro-breweries in rural Australia and a stint in a Melbourne barista hotspot, he encapsulates the term Beverage Director. Liam is as passionate about cracking open a frosty pilsner as he is decanting a beautiful bottle of vintage Burgundy. Always on hand to offer recommendations or create your perfect, bespoke wine flight, he may even pour you one of his favourite peated whiskeys.

Alice Stewart
Restaurant Director

Alice began her journey with us on the No6 pastry section, quickly taking the reins and establishing herself as a formidable talent within the team. Alice has been hugely influential in the development and progression of some of our most loved dishes, she cemented her position as a Senior Sous Chef in May 2021. Hospitality is in Alice’ veins and in 2022 she made the transition to the other side of the pass to become our Restaurant Director. Leading with empathy and warmth she can’t wait to welcome you!
