John Walton

Head Chef

I have had the pleasure of knowing John for over 13 years. We first met at Pétrus in 2003, when I worked as his Sous Chef. Not only is he the glue that holds together the running of Paul Ainsworth at No.6, he is a fantastic leader and mentor to his team, sharing his incredible talent and craftsmanship on a daily basis. A true friend, he is also an inspiration to me personally. He allows me to dream of new ideas and creations, whilst supporting us whole heartedly with the future goals and ambitions of the restaurant.

I have had the honour and privilege to work with some of the most incredible Maître d’s in the world like Jean Claude Breton of Restaurant Gordon Ramsay and Jean Philippe at Pétrus. Alex reminds me everyday of those great men. He has a rare and genuine ability to make our guests feel that the privilege of serving them is all ours. Alex is a ambassador for excellence in customer service and I feel one day he will be instrumental in making hospitality a respectable career for the next generation.

Chris McClurg

Senior Sous Chef

Chris is with out doubt one of the most talented chefs I have ever worked with. His energy and sheer drive makes me excited everyday to be the best we can. What sets Chris apart from the rest is an incredible knowledge of butchery that he learnt working with Jack ‘o’ Shea. This knowledge is invaluable for our quest to showcase the very best of Cornish meat and game. All this coupled together with wicked charm and Irish wit make a very bright future for Chris.

Sarah Holian

Restaurant Manager

In 2013 a very young and unassuming girl joined our team. All the way from the Wirral, Sarah very quickly made an impression, surprising herself at her amazing talent for hospitality. In 2016 Sarah was promoted to Restaurant Manager, taking this role and really making it her own. Her knowledge of our food and wine is infectious. Sarah passes this down through her team, which provides our guests with the experience we drive towards every day. On her days off you will find Sarah and her fiancé Jack Clements from Rojano’s in a restaurant living and breathing our wonderful industry.
