A prolific traveller and hospitality globetrotter, Chelsea settled in Cornwall in early 2018 quickly securing her position as Assistant Manager in the same year at Paul ainsworth at No6. With unwavering dedication and commitment, a true stalwart of excellence, Chelsea rose through the ranks to become Restaurant Manager in 2019 and then on to become Restaurant Director in 2020. Constantly searching for perfection, with her northern charm and the warmest welcomes, she now looks after The Ainsworth Collection family as Chief Operating Officer, a true master of her craft.

John Walton

Group Culinary Director

Paul has known John for over 15 years, since they first met working together under Marcus Wareing at Pétrus in 2003. Born and raised in Padstow, John began his career working for Rick Stein at The Seafood Restaurant, returning to his hometown to join Paul at No6 in 2006. In over a decade as Paul’s right-hand man, John has become a mentor to the whole Ainsworth family.

Chris McClurg

Chef de Cuisine, Paul Ainsworth at No.6 Restaurant

Chris has worked alongside Paul and John at No6 for nearly a decade. Drawn to the kitchen from a young age, he spent three years under the tutelage of Jack O’Shea at Jack’s iconic London butchery, honing skills that set him apart from the pack the moment he stepped into the No6 kitchen. Rising through the ranks to become senior sous chef in 2014, Chris was named Observer Food Monthly’s Young Chef of the Year for 2018, before becoming No6’s chef de cuisine at the beginning of 2019.

Paul Dodd

Operations Director, The Mariners Public House

Paul Ainsworth has known Paul Dodd for over a decade, since they worked together under Marcus Wareing at Pétrus in 2002. After working in London under Gordon Ramsay and Marcus, Paul left to travel, and in 2010 Paul moved to Padstow and took the role of General Manager at Caffè Rojano. 2018 saw Paul become Restaurant Director at Paul Ainsworth at No6, followed by a move in 2019 to become Operations Director at The Mariners Public House. Paul is dedicated to looking after all of our guests’ needs, and works hard to ensure that every customer has the very best experience during every visit.

Briony Phillips

Padstow Townhouse Director

Briony has over 10 years’ experience in Property and lettings, after learning her craft in London managing a profile of high end properties. In 2019 Briony made the decision to swap the big city for Cornish coast with her husband Simon relocating to Padstow Townhouse where she joined the team at Padstow Townhouse as a Hotel Assistant, working her way up to becoming Padstow Townhouse Director in November 2020. Briony’s wealth of knowledge and warm and welcoming personality are invaluable in helping give our guests the best experience possible.
